Bok Choy Stir-Fry with Ground Meat

Ingredients

  • 1 lb (450 g) bok choy, chopped (stems and leaves separated)
  • ½ lb (225 g) ground meat (pork, chicken, turkey, or beef)
  • 1 tbsp oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced (optional but great)

Sauce

  • 2 tbsp soy sauce (or tamari)
  • 1 tbsp oyster sauce (optional but recommended)
  • 1 tsp sesame oil
  • 2 tbsp water or broth
  • ½ tsp sugar or honey
  • Optional: chili flakes or chili oil

Instructions

  1. Heat oil in a wok or large pan over medium-high.
  2. Add ground meat; cook until browned, breaking it up.
  3. Add garlic and ginger; stir 20–30 seconds until fragrant.
  4. Add bok choy stems first; stir-fry 2–3 minutes.
  5. Add bok choy leaves; cook 1–2 minutes until just wilted.
  6. Stir in sauce ingredients; toss well and cook 1 minute more.
  7. Taste and adjust seasoning.

Serving Ideas

  • Serve over steamed rice or noodles
  • Top with green onions or sesame seeds
  • Add a fried egg on top for extra richness

Variations

  • Garlicky Chinese-style: Add 1 tsp Shaoxing wine
  • Spicy: Add sambal oelek or gochujang
  • Low-carb: Serve as-is or over cauliflower rice
  • Extra veg: Add mushrooms or bell peppers
