Apple pie

Here’s a classic homemade apple pie recipe—warm, flaky, and perfectly spiced 🍎🥧


Ingredients (makes 1 9-inch pie)

For the crust (2 crusts):

  • 2½ cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 6–8 tbsp ice water

For the filling:

  • 6–7 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced
  • ¾ cup sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp lemon juice
  • 1 tsp vanilla extract

Optional:

  • 1 egg, beaten (for egg wash)
  • 1–2 tbsp coarse sugar (for sprinkling)

Instructions

1. Make the crust:

  1. In a large bowl, mix flour, salt, and sugar.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. Add ice water 1 tbsp at a time until dough just comes together.
  4. Divide into two disks, wrap in plastic, and chill at least 1 hour.

2. Prepare the filling:

  1. In a large bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla. Toss to coat.

3. Assemble the pie:

  1. Preheat oven to 425°F (220°C).
  2. Roll out one disk of dough and line a 9-inch pie pan.
  3. Fill with apple mixture.
  4. Roll out the second disk and place on top. Cut slits for steam, or make a lattice crust.
  5. Optional: brush top with egg wash and sprinkle with sugar.

4. Bake:

  1. Bake at 425°F (220°C) for 15 minutes.
  2. Reduce heat to 375°F (190°C) and bake 35–40 minutes until crust is golden and filling is bubbly.
  3. Let cool 2 hours before serving for best slicing.

Tips

  • Extra flavor: Add ¼ tsp ground cloves or allspice.
  • Crispier bottom crust: Brush bottom crust with a thin layer of melted butter or sprinkle a little sugar before adding filling.
  • Shortcut: Use store-bought pie crust.
  • Serving: Perfect with vanilla ice cream or whipped cream.
