  • 1 lb (450 g) ground beef
  • 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic powder, salt, pepper)

  • 1 can (15 oz / 425 g) corn, drained
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 3 cups crushed tortilla chips (or Doritos for extra flavor)
  • 2 cups shredded cheese (cheddar, Mexican blend, or Monterey Jack)
  • Optional toppings: sour cream, chopped tomatoes, green onions, jalapeños, avocado, cilantro

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the beef
    • In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
    • Add taco seasoning and salsa, stirring to coat. Simmer 2–3 minutes.
  3. Assemble the casserole
    • In the prepared baking dish, layer crushed tortilla chips evenly.
    • Spread cooked beef mixture over the chips.
    • Top with corn, black beans, and shredded cheese.
  4. Bake
    • Bake for 15–20 minutes until cheese is melted and bubbly.
