🍪 Homemade Twix Cookies
1) Shortbread base
Ingredients
- 1 cup (225 g) unsalted butter, softened
- ½ cup sugar
- 2 cups all-purpose flour
- Pinch of salt
- 1 tsp vanilla (optional)
Steps
- Cream butter + sugar until fluffy.
- Mix in vanilla, salt, then flour until dough forms.
- Press into a lined baking pan (or roll & cut into bars).
- Bake at 350°F / 175°C for 18–22 min until lightly golden. Cool.
2) Caramel layer
Ingredients
- 1 cup soft caramels (or homemade caramel)
- 2–3 tbsp heavy cream
Steps
- Melt together gently, stir smooth, spread over cooled shortbread.
- Chill 10–15 min to set.
3) Chocolate topping
Ingredients
- 1½ cups milk chocolate (or dark, if you’re that person)
Steps
- Melt, spread over caramel, chill until firm.
- Slice into bars or squares.
✨ Done. Hide them from yourself.
Variations if you’re feeling fancy
- Salted caramel: sprinkle flaky sea salt on the chocolate
- Peanut butter Twix: swirl PB into the caramel
- Espresso Twix: add 1 tsp espresso powder to the chocolate
- Cookie version: bake round shortbread cookies and stack (cookie + caramel + chocolate)
