Sweet Alabama Pecan Bread

Ingredients

  • 1½ cups chopped pecans (toast for best flavor)
  • 1½ cups all-purpose flour
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup vegetable oil or melted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon (optional but great)
  • ¾ cup buttermilk (or milk + 1 tsp vinegar)

Instructions

  1. Preheat oven to 175°C / 350°F. Grease a loaf pan (or 8×8 pan).
  2. Toast pecans in a dry pan 3–5 minutes until fragrant; cool.
  3. In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, whisk eggs, sugars, oil (or butter), vanilla, and buttermilk.
  5. Fold dry ingredients into wet just until combined.
  6. Gently fold in pecans.
  7. Pour into pan and smooth top.
  8. Bake 45–55 minutes (toothpick should come out clean).
  9. Cool 10 minutes, then remove from pan.

Optional Southern Glaze (highly recommended)

Mix:

  • ½ cup powdered sugar
  • 1–2 tbsp milk or cream
  • Splash vanilla

Drizzle over warm bread.


Variations

  • Extra indulgent: Add ½ cup white or butterscotch chips
  • Maple pecan: Swap 2 tbsp sugar for maple syrup
  • Spiced: Add nutmeg or allspice
  • Bundt or muffins: Bake muffins 18–22 min
