Here’s a hearty, comforting Stuffed Pepper Soup—all the flavors of stuffed peppers in a cozy bowl. 🌶️🥣


🌶️ Stuffed Pepper Soup

🧾 Ingredients (4–6 servings)

  • 450 g (1 lb) ground beef (or turkey)
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2–3 cloves garlic, minced
  • 3 bell peppers (red, green, or yellow), chopped
  • 1 can (400 g / 14 oz) diced tomatoes
  • 4 cups beef or chicken broth
  • 1 cup uncooked rice (or ¾ cup for faster-cooking)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 1 tsp Italian seasoning or dried oregano
  • Optional: shredded cheese or fresh parsley for garnish

👩‍🍳 Instructions

1️⃣ Cook the Meat

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef; cook until browned.
  3. Remove excess fat if needed.

2️⃣ Sauté Veggies

  1. Add onions and garlic to the pot; sauté 3–4 minutes until softened.
  2. Add chopped bell peppers; cook 3–5 minutes.

3️⃣ Add Broth & Tomatoes

  1. Stir in diced tomatoes, broth, rice, salt, pepper, paprika, and Italian seasoning.
  2. Bring to a boil, then reduce heat to a simmer.

4️⃣ Simmer

  • Cover and cook 20–25 minutes, until rice is tender and soup is slightly thickened.

5️⃣ Serve

  • Taste and adjust seasoning.
  • Optional: top with shredded cheese or fresh parsley.

⭐ Tips

  • For low-carb version, replace rice with cauliflower rice or omit entirely.
  • You can also add tomato paste (2 tbsp) for richer flavor.
  • Leftovers taste even better the next day!
  • For a thicker soup, simmer uncovered for the last 5–10 minutes.
