🍓 Strawberry Pound Cake

Ingredients (9×5-inch loaf pan, serves 8–10)

  • 1 ½ cups (300 g) granulated sugar
  • 1 cup (2 sticks / 225 g) unsalted butter, softened
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 ½ cups (315 g) all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup (120 ml) milk
  • 1 ½ cups fresh strawberries, diced

Optional glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp milk or lemon juice

Instructions

  1. Prep
    • Preheat oven to 350°F / 175°C.
    • Grease and flour a 9×5-inch loaf pan.
  2. Cream butter and sugar
    • In a large bowl, beat butter and sugar until light and fluffy (2–3 minutes).
  3. Add eggs and vanilla
    • Beat in eggs one at a time, then stir in vanilla extract.
  4. Mix dry ingredients
    • In a separate bowl, whisk together flour, baking powder, and salt.
  5. Combine wet and dry
    • Gradually add flour mixture to butter mixture alternately with milk, beginning and ending with flour. Mix until just combined.
  6. Fold in strawberries
    • Gently fold in diced strawberries, being careful not to crush them.
  7. Bake
    • Pour batter into prepared loaf pan.
    • Bake 55–65 minutes, or until a toothpick inserted in the center comes out clean.
    • Let cool in the pan 10 minutes, then transfer to a wire rack to cool completely.
  8. Optional glaze
    • Mix powdered sugar with milk or lemon juice until smooth. Drizzle over cooled cake.

  • Prevent sinking strawberries: Toss diced strawberries in a tablespoon of flour before folding them in.
  • Moist cake: Don’t overmix once flour is added — just combine.
