Squash Parmesan

Squash Parmesan (often called Parmesan squash bake) is a simple, comforting dish where tender squash is layered or roasted with tomato sauce, herbs, and melted Parmesan cheese—similar in style to eggplant Parmesan.


🥒 What kind of squash?

You can use:

  • Zucchini (most common)
  • Yellow squash
  • Even butternut squash for a sweeter twist

🍽️ Basic Squash Parmesan Recipe

Ingredients

  • 2–3 medium zucchini (or squash), sliced
  • 1 cup tomato sauce
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella (optional)
  • 1–2 cloves garlic (minced)
  • Olive oil
  • Salt, pepper, dried oregano or basil

👩‍🍳 Instructions

  1. Prep squash
    Slice and lightly salt the zucchini. Let it sit 10–15 minutes, then pat dry (removes excess water).
  2. Cook squash
    Pan-fry or roast slices with a little olive oil until slightly golden.
  3. Layer
    In a baking dish:

    • Tomato sauce
    • Squash
    • Parmesan + mozzarella
      Repeat layers.
  4. Bake
    Bake at 180°C (350°F) for 25–30 minutes until bubbly and golden.
  5. Rest & serve
    Let it sit for 5–10 minutes before serving.

  • For a crispy version: coat squash lightly in breadcrumbs before frying
  • Want it healthier? Skip frying and bake slices directly
  • Add chicken or minced meat for a protein boost
