🐟 Spinach & Cream Cheese Stuffed Salmon

Ingredients (Serves 2–4)

  • 2–4 salmon fillets (skin-on or skinless, thick cut)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

🥬 Filling

  • 1 cup fresh spinach (chopped)
  • 4 oz cream cheese (softened)
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • Optional: red pepper flakes for heat

👩‍🍳 Instructions

1️⃣ Prepare Salmon

  1. Preheat oven to 375°F (190°C).
  2. Pat salmon dry.
  3. Cut a pocket in the side of each fillet (don’t cut all the way through).
  4. Season inside and outside with salt and pepper.

2️⃣ Make Filling

  1. In a bowl, mix cream cheese, spinach, garlic, Parmesan, and seasoning.
  2. Stir until well combined.

3️⃣ Stuff Salmon

  1. Spoon the filling into each salmon pocket.
  2. Secure with toothpicks if needed.

4️⃣ Cook

  • Heat olive oil in an oven-safe skillet over medium heat.
  • Sear salmon 2–3 minutes on one side.
  • Transfer skillet to oven and bake 12–15 minutes, until salmon flakes easily.

(Alternatively, bake directly on a lined baking sheet for 15–18 minutes.)


💡 Tips

  • Add chopped sun-dried tomatoes for extra flavor.
  • Use frozen spinach (thawed and squeezed dry) if fresh isn’t available.
  • Finish with a squeeze of lemon for brightness.
