Spare ribs

Here’s a fall-off-the-bone spare ribs recipe that works whether you finish them in the oven or on the grill.


🍖 Tender Spare Ribs (Oven or Grill)

Ingredients

  • 2 racks pork spare ribs
  • Salt & black pepper

Dry rub

  • 2 tsp paprika
  • 2 tsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: cayenne or chili powder

Optional glaze

  • BBQ sauce, honey, or maple syrup

Instructions

1. Prep

  1. Remove the membrane from the back of the ribs (important).
  2. Pat dry, season generously with rub.
  3. Wrap tightly in foil.

2. Slow bake (guaranteed tenderness)

  • Bake at 300°F / 150°C for 2½–3 hours.

3. Finish (pick one)

  • Oven broil: Unwrap, brush with BBQ sauce, broil 5–8 min until sticky.
  • Grill: Finish over medium heat 5–10 min, turning once.

How to know they’re done

  • Meat pulls back from the bones
  • Knife slides in easily
  • Rack bends easily when lifted

Flavor upgrades

  • Add a splash of apple juice or beer inside the foil
  • Mix BBQ sauce with honey or brown sugar for extra glaze
  • Finish with a light dust of dry rub after glazing

If you want:

  • Asian-style sticky ribs
  • Dry-rub only (no sauce)
  • Slow-cooker or Instant Pot ribs
