Ingredients

  • 4 pork chops (bone-in or boneless)
  • 1 onion, sliced
  • 2–3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup apple juice or cider (optional for sweetness)
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • Salt and pepper to taste
  • Optional: mushrooms, carrots, or potatoes for a one-pot meal

Instructions

  1. Season the pork chops with salt, pepper, and paprika.
  2. Layer onions at the bottom of the slow cooker and place the pork chops on top.
  3. Add garlic, herbs, and liquid (broth + apple juice).
  4. Cook on low for 6–8 hours or on high for 3–4 hours. Pork should be tender and fully cooked (internal temp ~145°F / 63°C).
  5. Optional: Thicken the sauce with a slurry of 1 tbsp cornstarch + 2 tbsp water in the last 15–20 minutes.

Tips for Juicy Pork Chops

  • Avoid overcooking—slow cookers make chops fall-apart tender, but too long can dry thinner cuts.
  • Use bone-in chops if possible; they stay juicier.
  • Adding vegetables turns this into a full, nutritious meal perfect for seniors.
