Ah, Shepherd’s Pie 🥧 — the classic comfort dish with savory meat, vegetables, and creamy mashed potato topping. Traditionally, it’s made with lamb, but many use beef (technically called “cottage pie”). Here’s a classic, foolproof recipe:


🥔 Classic Shepherd’s Pie

Ingredients (serves 4–6)

For the filling:

  • 1 lb (450 g) ground lamb (or beef for cottage pie)
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 1/2 cup beef or lamb broth
  • 1 tsp Worcestershire sauce
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • Salt & pepper, to taste
  • 2 tbsp olive oil

For the mashed potato topping:

  • 2 lbs (900 g) potatoes, peeled and cut into chunks
  • 4 tbsp butter
  • 1/4–1/2 cup milk (adjust for desired creaminess)
  • Salt & pepper, to taste
  • Optional: 1/4 cup grated cheddar cheese for topping

Instructions

  1. Cook the mashed potatoes
    • Boil potatoes in salted water until tender, 15–20 minutes.
    • Drain and mash with butter, milk, salt, and pepper. Set aside.
  2. Cook the filling
    • In a large skillet, heat olive oil over medium heat.
    • Sauté onion, carrots, and celery until softened, 5–7 minutes.
    • Add garlic and cook 1 minute more.
    • Add ground lamb, breaking it up, and cook until browned.
    • Stir in tomato paste, broth, Worcestershire sauce, thyme, and peas. Simmer 5–10 minutes until slightly thickened. Taste and adjust seasoning.
  3. Assemble the pie
    • Preheat oven to 400°F / 200°C.
    • Spread meat and vegetable mixture evenly in a baking dish.
    • Top with mashed potatoes, spreading smoothly or creating peaks with a fork. Sprinkle cheese on top if desired.
  4. Bake
    • Bake 20–25 minutes until the top is golden and lightly crisp.
    • Optional: broil 2–3 minutes for extra browning.
  5. Serve
    • Let rest 5 minutes before serving.

  • Vegetables: You can add corn, green beans, or mushrooms for variety.
  • Creamy potatoes: Add a bit of sour cream or cream cheese for extra richness.
  • Make ahead: Assemble and refrigerate; bake just before serving.
  • Freezing: Shepherd’s pie freezes well — bake from frozen or thaw overnight.
