Instructions

  1. Prepare the dough

    • Add yeast mixture, eggs, butter, and lemon zest. Knead until smooth and elastic (~8–10 minutes).
    • Cover and let rise 1–1.5 hours until doubled.
  2. Prepare the filling
    • In a small saucepan, heat milk and butter until butter melts.
    • Stir in sugar and poppy seeds; cook briefly until thickened.
    • Remove from heat and stir in vanilla or rum if using. Let cool.
  3. Shape the rolls
    • Preheat oven to 350°F (175°C).
    • Roll dough into a rectangle (~12×16 inches).
    • Spread cooled poppy seed filling evenly over dough, leaving a small border at edges.
    • Roll tightly from the long side into a log. Pinch edges to seal.
  4. Bake
    • Place roll on a parchment-lined baking sheet, seam side down.
    • Brush with beaten egg.
    • Bake 35–40 minutes until golden brown.
  5. Cool & serve
    • Let cool completely before slicing for clean layers.
    • Optional: dust with powdered sugar before serving.
