Here’s a classic and simple Pickled Beets recipe you can make at home:


Pickled Beets

Ingredients:

  • 3–4 medium beets, washed, peeled, and sliced or cubed
  • 1 cup white vinegar (or apple cider vinegar)
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tsp salt
  • 1/2 tsp ground cloves or whole cloves (optional)
  • 1/2 tsp allspice (optional)
  • 1 small onion, thinly sliced (optional)

Instructions:

  1. Cook the beets: Place peeled beets in a pot of water. Boil until tender (about 25–30 minutes). Drain and let cool slightly.
  2. Prepare pickling liquid: In a saucepan, combine vinegar, water, sugar, salt, and spices. Bring to a boil, stirring until sugar dissolves.
  3. Combine: Place beets (and onions, if using) into a clean jar or container. Pour hot pickling liquid over the beets, making sure they’re fully submerged.
  4. Cool and refrigerate: Let the beets cool to room temperature, then cover and refrigerate. They taste best after 24–48 hours.

Tips:

  • Pickled beets can last in the fridge for up to 2–3 weeks.
  • For a tangier flavor, increase the vinegar slightly or add a splash of lemon juice.
  • You can also add a cinnamon stick or a few peppercorns for extra warmth and spice.
