Pasta with quark cheese and bacon

Here’s a simple, proper pasta with quark cheese and bacon (think tĂșrĂłs tĂ©szta–style).


🍝 Pasta with Quark Cheese & Bacon

Ingredients (2–3 servings)

  • 300 g pasta (short shapes or wide noodles work best)
  • 200–250 g quark cheese (twarĂłg / tĂșrĂł / farmer cheese)
  • 150 g bacon, diced
  • 2–3 tbsp bacon fat or butter
  • Salt, to taste
  • Freshly ground black pepper

Optional but excellent

  • Sour cream or crĂšme fraĂźche (2–3 tbsp)
  • Chopped chives or parsley

Instructions

  1. Cook pasta in well-salted water until al dente. Reserve œ cup of pasta water, then drain.
  2. Fry bacon in a pan over medium heat until crispy. Leave the rendered fat in the pan.
  3. Warm pasta: Add drained pasta to the bacon pan with a splash of pasta water and butter (or extra bacon fat).
  4. Add quark: Lower the heat. Crumble in the quark cheese and gently toss until just warmed and creamy.
    • Add a spoon of sour cream if you want it extra smooth.
  5. Season with salt and lots of black pepper.
  6. Serve hot, topped with crispy bacon bits and optional herbs.

Pro tips

  • If your quark is very dry, mix it with a little sour cream before adding.
  • Don’t overheat after adding quark—keep it gentle so it stays creamy, not grainy.
  • Traditionally, some people serve it with extra quark and sour cream on top.
