Here’s a simple, cozy leek soup you can make easily 🍲

Basic Leek Soup Recipe

Ingredients

  • 3–4 leeks
  • 1 tbsp butter or olive oil
  • 1 medium potato (optional, for creaminess)
  • 3–4 cups vegetable or chicken broth
  • Salt & pepper to taste

Steps

  1. Prep the leeks: Trim off the dark green tops, slice the white/light green parts, and rinse well (dirt hides between layers).
  2. Sauté: Heat butter or oil in a pot. Add leeks and cook on low–medium heat for 5–8 minutes until soft (don’t brown).
  3. Add potato & broth: Chop the potato, add it to the pot, then pour in the broth.
  4. Simmer: Cover and cook for about 15–20 minutes, until everything is tender.
  5. Blend: Use a blender or immersion blender until smooth.
  6. Season: Add salt and pepper to taste.

Optional Variations

  • Creamy: Stir in a little milk or cream at the end.
  • Classic French-style: Add a knob of butter and serve with bread.
  • Extra flavor: Add garlic, thyme, or a bay leaf while simmering.
  • Chunky: Don’t blend—just mash lightly.
