🍋 Key Lime Cake

📝 Ingredients

For the Cake:

  • 2½ cups all-purpose flour
  • 1½ cups granulated sugar
  • 1 cup unsalted butter (softened)
  • 4 large eggs
  • ½ cup sour cream (or Greek yogurt)
  • ½ cup fresh key lime juice (about 8–10 key limes)
  • 1 tablespoon key lime zest
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup milk

For the Key Lime Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 3–4 cups powdered sugar
  • 2 tablespoons key lime juice
  • 1 teaspoon key lime zest
  • ½ teaspoon vanilla

👩‍🍳 Instructions

1️⃣ Prep

  • Preheat oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans (or one 9×13 pan).

2️⃣ Mix Dry Ingredients

  • Whisk together flour, baking powder, baking soda, and salt.

3️⃣ Cream Butter & Sugar

  • Beat butter and sugar until light and fluffy (about 3–4 minutes).

4️⃣ Add Eggs

  • Add eggs one at a time, mixing well after each.

5️⃣ Add Flavor

  • Mix in sour cream, lime juice, zest, and vanilla.

6️⃣ Combine

  • Alternate adding dry ingredients and milk, beginning and ending with flour mixture.
  • Mix just until combined (don’t overmix).

7️⃣ Bake

  • Pour batter evenly into pans.
  • Bake 25–30 minutes (9×13 may take 35–40 minutes).
  • A toothpick should come out clean.
  • Cool completely before frosting.

🧁 Make the Frosting

  1. Beat cream cheese and butter until smooth.
  2. Add powdered sugar gradually.
  3. Mix in lime juice, zest, and vanilla.
  4. Beat until fluffy and spreadable.

🍋 Optional Toppings

  • Lime slices
  • Extra zest
  • Toasted coconut
  • Graham cracker crumbs (for key lime pie flavor)

💡 Tips

  • Regular limes work if key limes aren’t available.
  • For extra moisture, brush cake layers with a light lime syrup (lime juice + sugar warmed together).
  • Store refrigerated because of the cream cheese frosting.
