Harvard Beets

🍠 Harvard beets

Harvard beets are a classic sweet-and-sour side dish made with Beetroot, vinegar, sugar, and butter. They’re known for their shiny red sauce and are often served with roasted meats or holiday meals.


🥘 Ingredients

  • 2 cups cooked beets, sliced or cubed
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • ¼ cup vinegar
  • ¼ cup water
  • 1 tbsp butter
  • Pinch of salt

👩‍🍳 Instructions

  1. Prepare the sauce
    In a saucepan, mix sugar and cornstarch.
  2. Add liquids
    Stir in vinegar and water.
  3. Cook
    Heat over medium, stirring until the sauce thickens and becomes glossy.
  4. Add butter and beets
    Stir in butter and the cooked beets.
  5. Simmer
    Cook for 5–10 minutes so the beets absorb the sweet-sour flavor.
  6. Serve warm.
