Here’s a simple garlic brown sugar chicken that works with thighs or breasts.
🍗 Garlic Brown Sugar Chicken
Ingredients
- 1½ lb (700 g) chicken thighs or breasts
- Salt & black pepper
- 1 tbsp olive oil
Sauce
- ⅓ cup brown sugar (packed)
- 4–6 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar (or lemon juice)
- 1 tsp paprika
- Optional: pinch of chili flakes

Oven Method (most popular)
- Preheat oven to 400°F / 200°C.
- Season chicken with salt and pepper.
- Heat oil in an oven-safe pan. Sear chicken 2–3 minutes per side until lightly golden.
- Mix sauce ingredients and pour over chicken.
- Bake 25–30 minutes, spooning sauce over chicken halfway, until glossy and cooked through.
Skillet Method
- Sear chicken in oil until golden.
- Lower heat, add sauce.
- Simmer 10–15 minutes, turning until thick and sticky.
Tips
- Thighs stay juicier and caramelize better
- Don’t burn the sugar—medium heat once sauce is added
- Finish with green onions or sesame seeds if you want it fancy
- Great with rice, mashed potatoes, or roasted broccoli
