Ingredients (makes 4–6 servings)

For the fritters

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs, finely chopped or minced
  • 1 small onion, finely grated
  • 1–2 cloves garlic, minced
  • 1 egg
  • ½ cup breadcrumbs (plus extra for coating)
  • ¼ cup grated Parmesan (optional)
  • 2 tbsp fresh parsley, chopped
  • Salt & pepper, to taste
  • ½ tsp paprika or chili powder (optional for heat)

For frying

  • ½–¾ cup vegetable oil

Optional dipping sauce

  • Mayonnaise, garlic aioli, or sweet chili sauce

Instructions

  1. Prepare the chicken mixture
    In a bowl, combine minced chicken, onion, garlic, egg, breadcrumbs, Parmesan, parsley, salt, pepper, and paprika. Mix well until sticky.
  2. Form fritters
    Shape mixture into small patties or nugget-sized pieces. Coat lightly in extra breadcrumbs for crunch.
  3. Heat oil
    Pour oil into a skillet (about ¼–½ inch deep) and heat over medium heat until shimmering.
  4. Fry fritters
    Fry chicken fritters 3–4 minutes per side, until golden brown and cooked through (internal temp 165°F / 74°C).
  5. Drain & serve
    Place on paper towels to remove excess oil. Serve hot with your favorite dipping sauce.

Tips for Perfect Fritters

  • Extra crunch: Use panko breadcrumbs.
  • Juiciness: Don’t overmix the chicken.
  • Uniform size: Makes frying and cooking even.
  • Oven finish: After frying, bake at 375°F (190°C) for 5–7 minutes to ensure fully cooked inside.

Variations

  • Cheesy chicken fritters: Add ¼ cup shredded cheese to the mixture.
  • Spicy fritters: Mix in chopped jalapeños or hot sauce.
  • Herb version: Add thyme, rosemary, or oregano.
  • Air-fryer: Cook at 400°F (200°C) for 12–15 minutes, flipping halfway.
