🍓 Classic Fruit Cobbler

Ingredients (6–8 servings)

Fruit filling

  • 4 cups fresh or frozen fruit (peaches, berries, apples, or mixed)
  • ½–¾ cup sugar (adjust depending on sweetness of fruit)
  • 1 tbsp lemon juice
  • 2 tsp cornstarch (for thickening; optional for very juicy fruit)
  • ½ tsp cinnamon (optional, depending on fruit)

Topping

  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup butter, cold and cut into small cubes
  • ⅓ cup milk (or cream)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F / 190°C.
  2. Prepare fruit: In a bowl, combine fruit, sugar, lemon juice, cornstarch, and cinnamon. Pour into a greased 8×8-inch baking dish.
  3. Make topping: In another bowl, mix flour, sugar, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk and vanilla to make a soft dough.
  4. Assemble: Drop spoonfuls of dough over fruit. Don’t worry about full coverage; the topping spreads while baking.
  5. Bake: 35–40 minutes until topping is golden and fruit is bubbly.
  6. Serve: Warm, optionally with ice cream or whipped cream.

Tips

  • Juicy fruit: Add 1–2 tsp cornstarch to prevent a watery cobbler.
  • Crispier topping: Sprinkle a bit of sugar on top before baking.
  • Mix & match: Combine berries, peaches, or apples for a dynamic flavor.
  • Shortcut: Use a prepared biscuit dough or canned pie crust for topping.
