Chow mein

Posted on January 22, 2026 by Admin

Ah, chow mein! 🥢 Let’s break it down: classic Chinese-style stir-fried noodles with veggies and optional protein. I’ll give a versatile recipe you can tweak depending on what you have.

🍜 Classic Chow Mein

Ingredients

Noodles

  • 8 oz (225 g) chow mein noodles or thin egg noodles
  • 1 tsp sesame oil (optional, for tossing)

Protein (optional)

  • 8 oz (225 g) chicken, beef, shrimp, or tofu, sliced thinly

Vegetables

  • 1 cup cabbage, shredded
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • 3–4 green onions, cut into 2-inch pieces
  • Optional: bean sprouts, snow peas, mushrooms

Sauce

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (or hoisin for vegetarian)
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1–2 tsp cornstarch + 2 tbsp water (for thickening, optional)
  • 1 clove garlic, minced
  • ½ inch ginger, minced

Oil for stir-frying

  • 2–3 tbsp vegetable oil

Instructions

  1. Cook noodles: Boil noodles according to package instructions until just tender. Drain and toss with a tiny bit of sesame oil to prevent sticking.
  2. Prepare protein: In a hot pan or wok, stir-fry your protein in 1 tbsp oil until cooked through. Remove and set aside.
  3. Stir-fry veggies: Add another tbsp oil, cook carrots, bell peppers, and cabbage 2–3 minutes until slightly tender but still crisp. Add garlic and ginger for 30 seconds.
  4. Combine: Return protein to pan. Add noodles. Pour sauce over everything. Toss quickly to coat evenly. Cook 1–2 minutes, until heated through and sauce slightly thickened.
  5. Finish: Toss in green onions and optional bean sprouts at the end for crunch. Serve immediately.

Tips & Variations

  • Vegetarian: Skip meat, add extra mushrooms or tofu.
  • Spicy: Add chili paste or sriracha to the sauce.
  • Crispy style: After tossing noodles, let them sit in a very hot oiled pan without stirring for a minute or two to get slight crispiness.
  • Sauce tweak: A splash of rice vinegar or Shaoxing wine adds extra depth.

If you want, I can also give a quick 15-minute “takeout-style” chow mein that’s basically restaurant-level delicious but super fast.

Do you want me to do that?
