🥬 Classic Cabbage Soup

Ingredients (serves 4–6)

  • 1 small head of cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz / 410 g) can diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika (optional)
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • Optional: 1–2 potatoes, diced, or 1 bell pepper for extra heartiness

Instructions

  1. Sauté aromatics
    • In a large pot, heat olive oil over medium heat.
    • Sauté onion, garlic, carrots, and celery for 5–7 minutes until softened.
  2. Add liquids & seasonings
    • Add broth, diced tomatoes (with juice), thyme, paprika, salt, and pepper. Bring to a simmer.
  3. Add cabbage (and optional potatoes)
    • Stir in chopped cabbage. Simmer 25–30 minutes until vegetables are tender.
  4. Adjust flavors & serve
    • Taste and adjust salt, pepper, or herbs.
    • Serve hot, optionally garnished with fresh parsley or a sprinkle of parmesan.

  • Hearty version: Add diced potatoes, beans, or cooked sausage.
  • Clear broth: Don’t overcook cabbage if you want it slightly crisp.
  • Flavor boost: Add a splash of vinegar or lemon juice at the end for brightness.
