Vegetable beef soup

Here’s a teen-friendly Vegetable Beef Soup recipe—hearty, healthy, and easy to make! 🥕🥩🍲


Ingredients (serves 3–4)

  • 1/2 lb (225 g) beef stew meat, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup green beans, chopped
  • 1 cup diced potatoes
  • 1 can (14 oz / 400 g) diced tomatoes
  • 4 cups beef broth
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper to taste
  • Optional: parsley for garnish

Instructions

  1. Brown the beef:
    • Heat olive oil in a large pot over medium heat.
    • Add beef, season with salt and pepper, and cook 3–5 minutes until browned.
  2. Sauté veggies:
    • Add onions, garlic, carrots, and celery. Cook 3–4 minutes until slightly softened.
  3. Add remaining ingredients:
    • Stir in potatoes, green beans, diced tomatoes, broth, and thyme.
    • Bring to a boil, then reduce heat to a simmer.
  4. Simmer:
    • Cover and cook 25–30 minutes, until beef is tender and vegetables are cooked through.
  5. Serve:
    • Taste and adjust salt and pepper.
    • Garnish with fresh parsley if desired.

Tips & Variations

  • Extra flavor: Add a splash of Worcestershire sauce or soy sauce to the broth.
  • Quick version: Use pre-cut frozen vegetables to save time.
  • Hearty boost: Add cooked pasta or rice to make it even more filling.
