🍲 Ingredients

  • 1 package (about 9–12 oz) Cheese tortellini
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken or vegetable broth
  • 1 cup diced tomatoes (canned or fresh)
  • 2 cups fresh spinach or kale
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

🍳 Instructions

  1. Sauté aromatics
    Heat olive oil in a large pot. Add onion, garlic, carrots, and celery. Cook 5–6 minutes until softened.
  2. Add broth & tomatoes
    Pour in the broth and diced tomatoes. Add Italian herbs, salt, and pepper. Bring to a simmer.
  3. Cook tortellini
    Add tortellini to the simmering soup. Cook according to package instructions (usually 3–5 minutes).
  4. Add greens
    Stir in spinach or kale in the last 2 minutes of cooking.
  5. Serve
    Ladle into bowls and top with grated Parmesan cheese. Serve hot with crusty bread.
