🍝 Túrós Csusza (Hungarian Pasta with Cottage Cheese)

Ingredients (4 servings)

  • 12 oz (350 g) Hungarian egg noodles, wide pasta, or pappardelle
  • 7 oz (200 g) túró (or ricotta cheese, well-drained)
  • 6 oz (170 g) bacon, diced
  • ½ cup (120 ml) sour cream
  • Salt, to taste
  • Freshly ground black pepper (optional)

Directions

Step 1: Cook the pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook noodles until al dente, drain, and reserve a little pasta water.

Step 2: Fry the bacon

  1. In a skillet, cook diced bacon over medium heat until crispy. Remove and drain on paper towels, keeping the bacon fat in the pan.

Step 3: Combine pasta and cheese

  1. In a large bowl, mix hot pasta with túró or ricotta. The heat slightly melts the cheese.
  2. Stir in sour cream (reserve a little if you like extra cream on top).
  3. Add crispy bacon and toss gently.

Step 4: Season and serve

  • Add salt to taste and a little pepper if desired.
  • Optional: drizzle with reserved sour cream or a little bacon fat for extra richness.
  • Serve warm, ideally with a side of fresh vegetables or a simple salad.

Tips

  • Túró: If unavailable, well-drained ricotta or farmer’s cheese works well.
  • For extra flavor, sprinkle some grated Parmesan over the top.
  • Some recipes add a small amount of sautéed onion for depth.
  • Leftovers can be gently reheated in a skillet or oven.
