Taco Tater Tot Casserole (Serves 4–6)

Ingredients

Meat Layer

  • 1 lb ground beef (or turkey/chicken)
  • 1 small onion, diced
  • 1 packet taco seasoning (or 2–3 tbsp homemade)
  • ¼ cup water

Cheese & Toppings

  • 2 cups shredded cheddar or Mexican blend cheese
  • Optional: ½ cup sliced black olives, diced green chilies

Tater Tot Layer

  • 1 (32 oz) bag frozen tater tots

Optional Garnishes

  • Sour cream
  • Salsa or pico de gallo
  • Sliced green onions
  • Avocado

Instructions

1. Cook the meat

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef with onion until browned; drain excess fat.
  3. Stir in taco seasoning and water; simmer 3–5 minutes until thickened.

2. Assemble casserole

  1. Spread cooked meat evenly in a greased 9×13-inch baking dish.
  2. Sprinkle 1½ cups of shredded cheese over the meat.
  3. Arrange frozen tater tots in a single layer on top.
  4. Sprinkle remaining ½ cup cheese (and optional toppings) over tots.

3. Bake

  • 25–30 minutes, until tater tots are golden and cheese is melted.

4. Serve

  • Top with sour cream, salsa, green onions, or avocado as desired.

Tips

  • Extra crispy tots: Bake the tater tots separately 10 minutes before adding to casserole, then finish baking together.
  • Spicy twist: Add diced jalapeños or a dash of hot sauce to the meat layer.
  • Make ahead: Assemble without tots, refrigerate overnight, add tots, and bake next day.
