Ingredients

For the crust:

  • 1 1/4 cups (160 g) all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup (115 g) cold unsalted butter, cubed
  • 3–4 tbsp ice water

For the filling:

  • 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (120 ml) milk or half-and-half
  • 2 large eggs
  • 1/4 cup (60 g) unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • Pinch of salt

Instructions

  1. Prepare the crust
    • In a bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs.
    • Add ice water 1 tbsp at a time, mixing until dough holds together.
    • Shape into a disk, wrap in plastic, and chill 30 minutes.
  2. Preheat oven
    • Preheat oven to 350Β°F (175Β°C).
  3. Prepare the sweet potatoes
    • Peel and boil sweet potatoes until tender, ~15–20 minutes.
    • Mash until smooth and measure 2 cups.
  4. Make the filling
    • In a bowl, combine mashed sweet potatoes, sugar, milk, eggs, melted butter, vanilla, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
  5. Assemble the pie
    • Roll out the chilled dough into a 9-inch pie pan. Trim edges.
    • Pour sweet potato filling into crust. Smooth the top.
  6. Bake
    • Bake 50–55 minutes until a knife inserted in the center comes out clean.
    • Cool completely before serving (helps the filling set).
  7. Serve
    • Serve as is or with a dollop of whipped cream.

  • For extra flavor, add 1–2 tsp bourbon or maple syrup to the filling.
  • To avoid a soggy crust, brush the crust with beaten egg before pouring the filling.
