🧁 Susie’s Sans-Gluten Vanilla Cupcakes

Light, fluffy, and simple gluten-free vanilla cupcakes.

Ingredients (makes ~12 cupcakes)

  • 1½ cups gluten-free all-purpose flour (with xanthan gum)
  • ¾ cup sugar
  • 1½ tsp baking powder (gluten-free)
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup milk (or dairy-free milk)
  • ⅓ cup oil or melted butter
  • 2 tsp vanilla extract

Instructions

  1. Heat oven to 180°C / 350°F. Line a cupcake tray.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until pale.
  4. Mix in oil/butter, milk, and vanilla.
  5. Add dry ingredients and stir until smooth (don’t overmix).
  6. Fill liners about ¾ full.
  7. Bake 18–22 minutes until lightly golden and a toothpick comes out clean.
  8. Cool completely before frosting.

Simple Vanilla Frosting (Optional)

  • ½ cup butter (or dairy-free alternative)
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 1–2 tbsp milk

Beat until fluffy and spread or pipe on cupcakes.

Tips

  • Let the batter rest 5 minutes before baking for better texture
  • Add lemon zest or sprinkles for fun flavor twists 🎉
