🧁 Susie’s Sans-Gluten Vanilla Cupcakes
Light, fluffy, and simple gluten-free vanilla cupcakes.
Ingredients (makes ~12 cupcakes)
- 1½ cups gluten-free all-purpose flour (with xanthan gum)
- ¾ cup sugar
- 1½ tsp baking powder (gluten-free)
- ¼ tsp salt
- 2 large eggs
- ½ cup milk (or dairy-free milk)
- ⅓ cup oil or melted butter
- 2 tsp vanilla extract
Instructions
- Heat oven to 180°C / 350°F. Line a cupcake tray.
- In a bowl, whisk flour, baking powder, and salt.
- In another bowl, beat eggs and sugar until pale.
- Mix in oil/butter, milk, and vanilla.
- Add dry ingredients and stir until smooth (don’t overmix).
- Fill liners about ¾ full.
- Bake 18–22 minutes until lightly golden and a toothpick comes out clean.
- Cool completely before frosting.
Simple Vanilla Frosting (Optional)
- ½ cup butter (or dairy-free alternative)
- 2 cups powdered sugar
- 1 tsp vanilla
- 1–2 tbsp milk
Beat until fluffy and spread or pipe on cupcakes.
Tips
- Let the batter rest 5 minutes before baking for better texture
- Add lemon zest or sprinkles for fun flavor twists 🎉
