Instructions
- Prep the peppers
- Cut the tops off and remove seeds.
- Lightly blanch in boiling water for 3–4 minutes (optional, for softer peppers).
- Cook the filling
- Heat oil in a pan over medium heat.
- Add onion and garlic, sauté until soft.
- Add ground beef and cook until browned.
- Stir in diced tomatoes, tomato paste, and spices.
- Mix in cooked rice and simmer for 5 minutes.
- Stuff the peppers
