Stuffed peppers with ground beef and rice

Here’s a classic, hearty recipe for stuffed peppers with ground beef and rice—simple, filling, and packed with flavor.


🫑 Stuffed Peppers (Beef & Rice)

Ingredients

  • 4–6 large bell peppers (any color)
  • 1 lb (450g) ground beef
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2–3 cloves garlic, minced
  • 1 can (14–15 oz) diced tomatoes (or fresh chopped tomatoes)
  • 2 tbsp tomato paste
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 1 tsp dried oregano or Italian seasoning
  • 1–2 tbsp oil
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prep the peppers
    • Cut the tops off and remove seeds.
    • Lightly blanch in boiling water for 3–4 minutes (optional, for softer peppers).
  2. Cook the filling
    • Heat oil in a pan over medium heat.
    • Add onion and garlic, sauté until soft.
    • Add ground beef and cook until browned.
    • Stir in diced tomatoes, tomato paste, and spices.
    • Mix in cooked rice and simmer for 5 minutes.
  3. Stuff the peppers
    • Fill each pepper with the beef-rice mixture.
    • Place them upright in a baking dish.
  4. Bake
    • Add a little water or sauce to the bottom of the dish.
    • Cover with foil and bake at 180°C (350°F) for 30–35 minutes.
  5. Add cheese
    • Remove foil, sprinkle cheese on top.
    • Bake uncovered for another 10 minutes until melted and bubbly.
  6. Serve
    • Garnish with parsley and serve hot.

Tips

  • Add chili flakes if you like some heat 🌶️
  • Swap rice with quinoa for a healthier twist
  • You can prep and freeze these before baking
