Stuffed Pepper Soup
Ingredients
- 1 lb ground beef (or turkey)
- 1 medium onion, diced
- 3 bell peppers, chopped
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (14.5 oz) can diced tomatoes
- 4 cups beef broth
- 1 tsp salt (to taste)
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp oregano
- ½ tsp sugar (optional)
- 1 cup cooked rice
Instructions
- Brown meat in a large pot. Drain excess grease.
- Add onion & peppers, cook 4–5 minutes until softened.
- Stir in garlic, cook 30 seconds.
- Add tomatoes, broth, and seasonings.
- Simmer uncovered for 25–30 minutes.
- Stir in cooked rice, simmer 5 minutes.
- Taste & adjust seasoning, serve hot.
