Here’s a comforting, flavorful stuffed pepper soup—easy and filling 🥣


Stuffed Pepper Soup

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 medium onion, diced
  • 3 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups beef broth
  • 1 tsp salt (to taste)
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp oregano
  • ½ tsp sugar (optional)
  • 1 cup cooked rice

Instructions

  1. Brown meat in a large pot. Drain excess grease.
  2. Add onion & peppers, cook 4–5 minutes until softened.
  3. Stir in garlic, cook 30 seconds.
  4. Add tomatoes, broth, and seasonings.
  5. Simmer uncovered for 25–30 minutes.
  6. Stir in cooked rice, simmer 5 minutes.
  7. Taste & adjust seasoning, serve hot.

Tips & Variations

  • 🧀 Top with shredded cheese
  • 🌶️ Add red pepper flakes
  • 🍚 Use cauliflower rice for low-carb
  • 🫑 Green peppers = classic flavor, red/yellow = sweeter
