Stuffed Pepper Soup
Ingredients
- 1 lb ground beef (or turkey)
- 1 tbsp olive oil (if needed)
- 1 medium onion, diced
- 3 bell peppers (red/green/yellow), chopped
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (14.5 oz) can diced tomatoes
- 4 cups beef broth (or chicken broth)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp dried oregano
- ½ tsp sugar (optional, balances acidity)
- 1 cup cooked rice (white or brown)
Instructions
- Brown the meat
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat if needed.
- Sauté vegetables
- Add onion and bell peppers. Cook 4–5 minutes until softened.
- Stir in garlic, cook 30 seconds.
- Build the soup
- Add crushed tomatoes, diced tomatoes, broth, salt, pepper, paprika, Italian seasoning, oregano, and sugar.
- Simmer
- Bring to a boil, reduce heat, and simmer 25–30 minutes.
- Add rice
- Stir in cooked rice and simmer 5 more minutes.
