Here’s a fun and tasty way to make stuffed mashed potato nests—crispy on the outside, creamy on the inside 🥔🧀


Stuffed Mashed Potato Nests

Ingredients (makes ~6 nests)

  • 3 cups mashed potatoes (smooth, slightly firm)
  • 1 egg (for binding)
  • ¼ cup grated Parmesan cheese
  • Salt & pepper to taste
  • ½ cup shredded cheese (cheddar, mozzarella, or your choice)
  • Optional fillings: cooked bacon bits, chopped green onions, cooked ham, sautéed mushrooms
  • Oil or cooking spray (for baking)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a muffin tin.
  2. Mix mashed potatoes with egg, Parmesan, salt, and pepper until smooth and combined.
  3. Form nests
    • Take a handful of mashed potato mixture.
    • Press into muffin cups, shaping a little well in the center for filling.
  4. Add fillings
    • Spoon shredded cheese and any other fillings into the center of each nest.
    • Top with a little more mashed potato if desired.
  5. Bake for 15–20 minutes until tops are golden and slightly crispy.
  6. Optional crisping: Broil 1–2 minutes at the end for extra golden tops.
  7. Serve warm, garnished with chopped herbs if desired.

Tips & Variations

  • Crispier nests: Add a little panko to the mashed potatoes before baking.
  • Mini bites: Use a mini muffin tin for appetizers.
  • Make-ahead: Assemble and refrigerate, then bake when ready.
  • Extra creamy: Mix in sour cream or cream cheese for richer mashed potatoes.
