Strawberry tart

Ohhh Strawberry Tart 🍓✨—fresh, elegant, and not too sweet. This is a classic bakery-style strawberry tart with a crisp crust, creamy filling, and glossy strawberries on top.


Classic Strawberry Tart

Serves: 8

Chill time: 1–2 hours


Ingredients

Tart Crust

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup cold butter, cubed
  • 1 egg yolk
  • 1–2 tbsp cold water

(Shortcut: store-bought tart shell)

Cream Filling

  • 1 cup whole milk
  • 3 egg yolks
  • 1/4 cup sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract

(Shortcut: pastry cream mix or vanilla pudding)

Topping

  • 1 lb fresh strawberries, hulled & halved
  • 1/4 cup strawberry jam (for glaze)

Instructions

  1. Make the crust
    • Mix flour and powdered sugar. Cut in butter until crumbly.
    • Add egg yolk and water; mix until dough forms.
    • Press into tart pan, chill 20 minutes.
    • Bake at 375°F (190°C) for 18–20 minutes. Cool completely.
  2. Make pastry cream
    • Heat milk until steaming.
    • Whisk yolks, sugar, and cornstarch.
    • Slowly whisk hot milk into egg mixture.
    • Return to heat, cook until thick.
    • Stir in vanilla and cool.
  3. Assemble
    • Spread pastry cream into cooled crust.
    • Arrange strawberries on top.
  4. Glaze
    • Warm jam and brush over strawberries for shine.
  5. Chill & serve
    • Chill at least 1 hour before slicing.
