Strawberry Cream Cheese Cobbler

Here’s a simple, cozy Strawberry Cream Cheese Cobbler you can make at home 🍓

Ingredients

Strawberry layer

  • 4 cups fresh or frozen strawberries (hulled & sliced)
  • ½ cup sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • ½ tsp vanilla extract

Cream cheese layer

  • 8 oz cream cheese (softened)
  • ¼ cup sugar
  • 1 tsp vanilla extract

Cobbler topping

  • 1 cup all-purpose flour
  • ½ cup sugar
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ½ cup (1 stick) melted butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. Make strawberry filling:
    Mix strawberries, sugar, cornstarch, lemon juice, and vanilla. Spread evenly in the dish.
  3. Cream cheese layer:
    Beat cream cheese, sugar, and vanilla until smooth. Drop spoonfuls over the strawberries (don’t spread completely).
  4. Cobbler batter:
    Whisk flour, sugar, baking powder, and salt. Stir in milk and melted butter until smooth.
  5. Assemble:
    Pour batter evenly over the cream cheese and strawberries.
  6. Bake for 40–45 minutes, until golden on top and bubbly around the edges.
  7. Cool for 10–15 minutes before serving.

Serving Tips

  • Great warm with vanilla ice cream or whipped cream
  • Even better the next day after chilling
  • You can swap strawberries for mixed berries or peaches
