Ingredients
- 1 ribeye, sirloin, or strip steak (8–12 oz)
- Salt & black pepper, to taste
- 1 tbsp oil (olive or vegetable)
- 2 tbsp butter
- 2–4 eggs
- Optional: garlic clove or fresh thyme/rosemary
Instructions
- Bring steak to room temp
- Take steak out of the fridge 20–30 minutes before cooking. Pat dry.
- Season & sear steak
- Season generously with salt and pepper.
- Heat oil in a skillet over high heat.
- Sear steak 3–4 minutes per side (medium-rare) or to your doneness preference.
- Add butter, garlic, and herbs during the last minute and baste.
- Remove steak and let rest 5 minutes.
- Cook eggs
- In the same pan or a separate pan, cook eggs to your liking (sunny-side up, over easy, or scrambled).
- Season lightly with salt and pepper.
- Serve
- Slice steak against the grain.
- Serve alongside eggs with extra pan butter drizzled over the top.
