🍮 Soufflé (Light & Fluffy Dessert)

Here’s a simple way to make a classic sweet soufflé, perfect for beginners.


Ingredients (4 servings)

  • 3 large eggs (separated)
  • ⅓ cup sugar (plus extra for coating)
  • ½ tsp vanilla extract
  • 2 tbsp butter (for greasing)
  • 1 tbsp flour (for dusting)
  • Pinch of salt
  • Optional: 2–3 tbsp milk or cream for extra richness

Instructions

  1. Prepare ramekins:
    • Grease 4 ramekins with butter.
    • Sprinkle sugar inside, tilting to coat evenly.
  2. Make base:
    • In a bowl, whisk egg yolks with vanilla and milk/cream (if using).
    • Add flour and mix until smooth.
  3. Whip egg whites:
    • Beat egg whites with a pinch of salt until soft peaks form.
    • Gradually add sugar, continue beating until stiff peaks form.
  4. Fold whites into base:
    • Gently fold ⅓ of the egg whites into the yolk mixture to lighten it.
    • Then carefully fold in the rest until fully combined.
  5. Fill ramekins:
    • Spoon mixture into prepared ramekins, leaving a little space at the top.
  6. Bake:
    • Preheat oven to 190°C / 375°F.
    • Place ramekins in a baking dish with hot water halfway up their sides (water bath).
    • Bake 12–15 minutes until puffed and golden.
  7. Serve immediately (soufflés fall quickly if left to sit).

Tips

  • Don’t overmix when folding egg whites—keep it light and airy.
  • Flavor variations: chocolate, lemon, orange, or a pinch of cinnamon.
  • Dust with powdered sugar before serving for a fancy touch.
