Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • 1 cup whole cranberry sauce (canned or homemade)
  • 1/2 cup orange juice
  • 1/4 cup honey or maple syrup
  • 1 tbsp soy sauce or Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt & black pepper to taste
  • Optional: fresh thyme or rosemary for garnish

Instructions

  1. Prepare chicken
    Season chicken breasts lightly with salt and pepper. Place in the slow cooker.
  2. Mix sauce
    In a bowl, whisk together cranberry sauce, orange juice, honey, soy/Worcestershire sauce, Dijon, and garlic powder.
  3. Combine & cook
    Pour sauce over chicken. Cover and cook on low for 4–6 hours or high for 2–3 hours, until chicken is cooked through and tender.
  4. Serve
    • Spoon sauce over chicken
    • Garnish with fresh thyme or rosemary
    • Excellent with rice, quinoa, or roasted vegetables

Tips

  • For extra flavor, sear chicken briefly in a skillet before adding to the slow cooker.
  • You can stir in a handful of dried cranberries or chopped pecans for texture.
  • Leftovers make great sandwiches or wraps.
