Garlic Butter Shrimp with Spinach

Servings: 2–3

Ingredients

  • 1 lb (450 g) shrimp, peeled and deveined
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1/2 tsp red pepper flakes (optional)
  • Salt & pepper, to taste
  • Juice of 1/2 lemon
  • Optional garnish: grated Parmesan or chopped parsley

Instructions

  1. Cook the shrimp
    • Heat olive oil or butter in a large skillet over medium-high heat.
    • Season shrimp with salt and pepper.
    • Sear shrimp 2–3 minutes per side until pink and opaque. Remove from skillet and set aside.
  2. Sauté the spinach
    • In the same skillet, add garlic and red pepper flakes (if using). SautĂ© 30 seconds until fragrant.
    • Add spinach and cook until just wilted (~2–3 minutes).
  3. Combine & finish
    • Return shrimp to the skillet, toss with spinach.
    • Squeeze lemon juice over the top and mix gently.
  4. Serve
    • Serve immediately as is, over rice, pasta, or with crusty bread.
    • Optional: sprinkle Parmesan or parsley on top.

🔥 Tips

  • Don’t overcook shrimp—they cook very fast and become rubbery.
  • Can add cherry tomatoes or mushrooms for extra flavor.
  • For a creamy version, add 1/4 cup heavy cream or cream cheese when tossing shrimp with spinach.
  • Works well as a low-carb meal over zucchini noodles or cauliflower rice.
