Easy Shepherd’s Pie

Ingredients (serves 4–6)

Meat filling

  • 1 lb (450 g) ground beef or lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • Salt & pepper to taste
  • 1 tsp dried thyme or Italian seasoning

Mashed potato topping

  • 4–5 medium potatoes, peeled and chopped
  • 3 tbsp butter
  • 1/4 cup milk
  • Salt & pepper
  • Optional: 1/2 cup shredded cheese

Instructions

  1. Make the mashed potatoes
    • Boil potatoes in salted water until soft (15 minutes).
    • Drain and mash with butter, milk, salt, and pepper. Set aside.
  2. Cook the filling
    • In a skillet, cook onion and carrots until soft.
    • Add garlic and ground meat. Cook until browned.
    • Stir in tomato paste, broth, peas, seasoning, salt, and pepper.
    • Simmer 5–10 minutes until thick.
  3. Assemble
    • Spread meat mixture in a baking dish.
    • Spoon mashed potatoes on top. Add cheese if using.
  4. Bake
    • Bake at 375°F (190°C) for 20–25 minutes until golden.
  5. Serve
    • Let cool slightly and enjoy warm.

  • Use a fork to make ridges in the potatoes so they brown nicely
  • Swap beef for lentils or mushrooms for a vegetarian version
