Ingredients (1–2 servings)
- 1 steak (ribeye, sirloin, or filet; 1–1.5 inches thick)
- Salt & black pepper
- 1–2 tbsp oil (vegetable or canola)
- 1–2 tbsp butter (optional)
- 1–2 garlic cloves, smashed (optional)
- Fresh herbs like rosemary or thyme (optional)
Instructions
- Prep steak
- Pat dry with paper towels.
- Season generously with salt and pepper.
- Let it sit at room temperature for 20–30 minutes.
- Heat pan
- Use a heavy skillet (cast iron is ideal).
- Heat over high heat until very hot.
- Sear steak
- Add oil to pan.
- Place steak in pan without moving it.
- Cook 3–5 min per side for medium-rare (depending on thickness).
- Optional: add butter, garlic, and herbs, and spoon melted butter over steak.
- Rest
- Remove steak and let rest 5–10 min.
- This keeps juices inside.
- Serve
- Slice against the grain for tenderness.
