Scampi shrimp
Shrimp Scampi is a quick, garlicky dish that’s buttery, lemony, and super easy 🍤
Classic Shrimp Scampi
Ingredients
- 1 lb shrimp, peeled & deveined
- 4 tbsp butter
- 2 tbsp olive oil
- 4–5 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- Salt & pepper
- ¼ cup lemon juice (fresh is best)
- Zest of 1 lemon (optional)
- ¼ cup parsley, chopped
Instructions
- Pat shrimp dry and season lightly with salt & pepper.
- Heat olive oil and 2 tbsp butter in a skillet over medium heat.
- Add garlic and red pepper flakes; sauté about 30 seconds (don’t brown).
- Add shrimp in a single layer; cook 1–2 minutes per side until pink.
- Add lemon juice and remaining butter; simmer 1–2 minutes.
- Taste and adjust seasoning.
- Remove from heat and sprinkle with parsley and lemon zest.
How to Serve
- Over pasta (linguine is classic)
- With rice or orzo
- With crusty bread
- Alongside vegetables
Tips
- Don’t overcook shrimp—they turn rubbery fast
- If you like it richer, add a splash of broth or cream
- White wine is traditional, but optional
