Here’s a simple, tasty recipe for a Sausage, Green Bean, and Potato Casserole you can try:


Ingredients (serves 4–6)

  • 1 lb (450 g) sausage (Italian or breakfast sausage, sliced or crumbled)
  • 4–5 medium potatoes, peeled and diced
  • 2 cups green beans, trimmed (fresh or frozen)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar works great)
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme (optional)
  • Salt and pepper, to taste
  • ½ cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the sausage: In a skillet over medium heat, cook the sausage until browned and fully cooked. Remove and set aside.
  3. Cook the potatoes: Boil diced potatoes in salted water for 8–10 minutes until just tender. Drain.
  4. Cook green beans: Steam or boil green beans for 4–5 minutes until crisp-tender. Drain.
  5. Make the sauce:
    • In the same skillet, melt butter and sauté onions and garlic until soft.
    • Sprinkle in flour and stir for 1–2 minutes.
    • Slowly whisk in milk until smooth and thickened.
    • Add salt, pepper, and thyme.
  6. Assemble the casserole:
    • In a greased baking dish, layer potatoes, green beans, and sausage.
    • Pour the sauce over the top and mix gently.
    • Sprinkle shredded cheese on top.
    • Optional: Add breadcrumbs for a crunchy topping.
  7. Bake: 25–30 minutes, until bubbly and golden on top.

💡 Tip: You can swap the sausage for turkey or chicken sausage for a lighter version. Also, mixing in a bit of cooked bacon adds extra flavor.
