Ahhh, Reuben Bake 😍 — all the classic deli flavors, but warm, melty, and baked into pure comfort. It’s basically a Reuben sandwich turned into a casserole, and it’s dangerously good.


🥪 What a Reuben Bake Is

Everything you love about a Reuben:

  • Corned beef
  • Sauerkraut
  • Swiss cheese
  • Rye bread
  • Thousand Island (or Russian) dressing

…layered or mixed, then baked until bubbly and golden.


🧀 Ingredients

  • 1 lb corned beef, chopped
  • 2 cups sauerkraut, well drained
  • 3 cups Swiss cheese, shredded
  • 4 cups rye bread, cubed
  • 1 cup Thousand Island dressing
  • 2 tbsp butter, melted
  • Optional: caraway seeds or black pepper

🔥 How to Make It

  1. Preheat oven
    • 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Layer the casserole
    • Spread half the rye bread cubes in the dish.
    • Top with half the corned beef, sauerkraut, Swiss cheese, and dressing.
    • Repeat layers.
  3. Finish the top
    • Drizzle melted butter over the top layer of bread.
    • Optional: sprinkle caraway seeds for authentic rye flavor.
  4. Bake
    • Cover with foil and bake 30 minutes.
    • Uncover and bake 10–15 minutes more until bubbly and lightly golden.
  5. Rest & serve
    • Let sit 5–10 minutes before slicing.

💡 Tips & Variations

  • Drain sauerkraut really well so the bake doesn’t get soggy.
  • Use pastrami instead of corned beef for a smoky twist.
  • Serve with extra dressing on the side for dipping (highly recommended).
  • Great with a simple green salad or pickles on the side.
