🥪🧀 Reuben Bake (Easy Casserole)

Ingredients

  • 1 lb corned beef, chopped (or sliced deli corned beef)
  • 2 cups sauerkraut, drained and squeezed dry
  • 2 cups shredded Swiss cheese
  • 1 cup Thousand Island dressing
  • 4–5 cups rye bread, cubed
  • 3 tbsp butter, melted
  • Optional: caraway seeds or fresh parsley

Instructions

  1. Preheat oven to 375°F / 190°C. Grease a 9×13-inch baking dish.
  2. Spread bread cubes evenly in the bottom of the dish.
  3. Layer corned beef over bread.
  4. Add sauerkraut, spreading evenly.
  5. Drizzle Thousand Island dressing over the top.
  6. Sprinkle with Swiss cheese.
  7. Drizzle melted butter over everything. Add caraway seeds if using.
  8. Bake uncovered for 30–35 minutes, until hot and bubbly and the top is lightly golden.
  9. Let rest 5–10 minutes before serving.
