Here’s a simple and crispy Potato Pancake recipe—perfect as a side or snack 🥔✨


Potato Pancakes (Latkes)

Ingredients (makes 6–8 pancakes)

  • 4 medium potatoes, peeled and grated
  • 1 small onion, grated
  • 2 large eggs
  • ¼ cup all-purpose flour
  • 1 tsp salt
  • ¼ tsp black pepper
  • Vegetable oil, for frying
  • Optional toppings: sour cream, applesauce, chives

Instructions

  1. Prepare potatoes
    • Grate potatoes and onion.
    • Squeeze out excess liquid using a clean kitchen towel to make the pancakes crispier.
  2. Make batter
    • In a bowl, combine grated potatoes and onion with eggs, flour, salt, and pepper. Mix well.
  3. Heat oil
    • Pour 2–3 tbsp vegetable oil into a skillet and heat over medium-high heat.
  4. Cook pancakes
    • Spoon small portions of batter into the skillet and flatten slightly.
    • Fry 3–4 minutes per side until golden brown and crispy.
  5. Drain & serve
    • Place on paper towels to drain excess oil.
    • Serve warm with sour cream or applesauce.

Tips & Variations

  • Extra crispy: Use a mix of starchy (Russet) and waxy potatoes.
  • Flavor boost: Add garlic powder, paprika, or chopped herbs.
  • Cheesy: Fold in shredded cheddar or Parmesan.
  • Oven option: Bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
