Here’s a simple and delicious Potato Pancake recipe—crispy on the outside, tender inside 🥔✨


Potato Pancakes (Latkes)

Ingredients (makes 6–8 pancakes)

  • 4 medium potatoes, peeled and grated
  • 1 small onion, grated
  • 2 large eggs
  • ¼ cup all-purpose flour
  • 1 tsp salt
  • ¼ tsp black pepper
  • Vegetable oil, for frying
  • Optional toppings: sour cream, applesauce, chives

Instructions

  1. Prepare potatoes
    • Grate potatoes and onion.
    • Place in a clean kitchen towel and squeeze out excess liquid.
  2. Make batter
    • In a large bowl, mix grated potatoes and onion with eggs, flour, salt, and pepper until combined.
  3. Heat oil
    • Heat 2–3 tbsp vegetable oil in a skillet over medium-high heat.
  4. Cook pancakes
    • Spoon batter into skillet, flattening lightly with a spatula.
    • Cook 3–4 minutes per side until golden brown and crispy.
  5. Drain & serve
    • Transfer to a paper towel-lined plate to drain excess oil.
    • Serve warm with sour cream or applesauce.

Tips & Variations

  • Extra crispy: Use a mix of potato types (starchy + waxy).
  • Flavor boost: Add garlic powder, paprika, or chopped herbs to the batter.
  • Cheese: Fold in shredded cheddar or Parmesan for a cheesy twist.
  • Oven option: Bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
