Potato Meatball Bake
Ingredients (serves 6):
- 1½–2 lbs potatoes, peeled and thinly sliced
- 20–24 frozen or homemade meatballs
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1½ cups shredded mozzarella or cheddar cheese
- ½ cup grated Parmesan cheese
- 1½ cups cream or milk
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt & pepper, to taste
- 2 tbsp butter, cut into small pieces
Instructions:
- Preheat oven:
375°F (190°C). Grease a 9×13-inch baking dish. - Layer potatoes:
Spread half the sliced potatoes in the dish. Season lightly with salt, pepper, paprika, and Italian seasoning. - Add meatballs:
Place meatballs evenly over potatoes. Sprinkle onion and garlic over the top. - Add remaining potatoes:
Layer the rest of the potatoes on top. Season again lightly. - Add cream & butter:
Pour cream evenly over everything. Dot with butter pieces. - Cover & bake:
Cover with foil and bake 45 minutes. - Add cheese:
Remove foil, sprinkle mozzarella and Parmesan on top. - Finish baking:
Bake uncovered another 15–20 minutes until cheese is melted, golden, and potatoes are tender. - Rest & serve:
Let sit 10 minutes before serving.
