One-Pan Pork Chops & Potatoes
Ingredients (serves ~4)
- 4 pork chops (bone-in or boneless)
- 4–5 potatoes, diced or sliced
- 2–3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried thyme or rosemary
- Salt & pepper, to taste
- Optional: 1 small onion, sliced
Instructions
- Preheat oven to 400°F (205°C).
- Season potatoes
Toss potatoes (and onion if using) with half the olive oil, salt, pepper, garlic powder, and paprika. - Season pork chops
Rub pork chops with remaining olive oil, salt, pepper, and herbs. - Bake
Spread potatoes on a baking sheet or pan.
Place pork chops on top or beside them.
Bake uncovered for 35–40 minutes, flipping pork chops halfway, until:- Potatoes are tender
- Pork reaches 145°F (63°C) inside
- Rest & serve
Let pork chops rest 5 minutes before serving.
