🍰 Pineapple Heaven Cake

Ingredients

  • 1 box yellow cake mix
  • 3 large eggs
  • 1 can (20 oz) crushed pineapple with juice
  • 1 cup granulated sugar
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1 tub (8 oz) whipped topping (Cool Whip), thawed
  • Optional garnish: shredded coconut or maraschino cherries

Instructions

  1. Bake the Cake
    • Preheat oven to 350°F (175°C).
    • Prepare the cake mix according to box directions using eggs, oil, and water.
    • Bake in a greased 9×13-inch pan. Let cool slightly.
  2. Pineapple Topping
    • In a saucepan, combine crushed pineapple (with juice) and sugar.
    • Bring to a boil, stirring until sugar dissolves.
    • While cake is still warm, poke holes all over with a fork and pour the hot pineapple mixture evenly over the cake. Let cool completely.
  3. Creamy Layer
    • Whisk pudding mix and cold milk until thick.
    • Gently fold in whipped topping.
    • Spread evenly over cooled cake.
  4. Chill & Serve
    • Refrigerate at least 2 hours before serving.
    • Garnish if desired.

Tips

  • Tastes even better the next day after chilling overnight.
  • For extra tropical flavor, sprinkle toasted coconut on top.
  • You can use white cake mix for a lighter flavor.
